I hired a guide in Fes purely to avoid dying in the tannery quarter, and he handed me a sprig of mint before we even reached the dye pits, motioning for me to hold it to my nose. The smell won anyway. What stayed with me was the color — vats of saffron and indigo worked by men standing knee-deep since dawn.
